Low Carb Recipes

Cauliflower rice

Ingredients:

  • 7 cups of cauliflower, cleaned and separated into florets 
  • ½ tablespoon olive oil
  • ½ tablespoon minced garlic
  • ½ cup of chopped onion 
  • ¾ cup of boiling water
  • Salt to taste

Method of preparation:

Place the cauliflower in a food processor and pulse until it resembles grains of rice. 

Add ½ tablespoon of olive oil, sauté ½ tablespoon of chopped garlic and ½ cup of chopped onion in a pan over medium heat for approximately 2 minutes. 

Add the processed cauliflower, ¾ cup of boiling water and salt to taste. 

Cover the pan, reduce the heat and let it cook for 10 minutes or until the water evaporates. Serve immediately.

Eggplant lasagna

Ingredients:

  • 3 large eggplants
  • 1 can of tomato sauce
  • 1 bunch of coriander, cut into small pieces 
  • Pitted and sliced olives
  • 300 g sliced mozzarella cheese
  • 300 g sliced ham
  • 2 tablespoons of olive oil
  • catupiry cheese

Method of preparation:

Cut the eggplants lengthwise into thin slices.

Place the two tablespoons of olive oil and the tomato sauce at the bottom of a rectangular ovenproof baking dish. 

Add a layer of eggplant, cover with tomato sauce, sprinkle with olives and coriander. 

Next, place a layer of ham, a layer of eggplant, cover with tomato sauce and on top place a layer of mozzarella cheese. 

Repeat the steps until you have two more layers. Place catupiry cheese on top of the last layer to taste and cover the baking tray with aluminum foil. 

Bake in the oven at 180°C for approximately 30 minutes, until cooked. Then remove the aluminum foil and leave for 5 to 10 minutes to brown.

Beetroot gnocchi

Ingredients:

  • ¹/² beetroot
  • ¹/² sweet potato
  • 2 tablespoons rice flour
  • Pink salt to taste
  • Coconut milk

Method of preparation:

Cook the beetroot and sweet potato until pureed. 

Then mash the potato, beetroot and mix in the flour, 1 tablespoon of coconut milk and pink salt. 

Spread rice flour on a work surface and knead the dough. Roll the dough into gnocchi-shaped rolls. Drop the gnocchi rolls into boiling water. They are ready when they float. Serve with a sauce of your choice.

Pizza with cauliflower dough

Ingredients

  • 2 cups cauliflower without the stem
  • 1 egg
  • ½ cup grated mozzarella
  • ½ cup grated ricotta
  • 1 small clove of garlic, crushed
  • ½ teaspoon nutmeg

Method of preparation

Chop the cauliflower until it forms a kind of crumble and place it in a microwave-safe bowl. 

Cover with plastic wrap and, using a knife, make holes in it and microwave for about 8 minutes at maximum power. 

Be careful not to overcook it, it should be soft and not dark. 

Once they are ready, remove the plastic wrap and let them cool. Mix the remaining ingredients with the cauliflower crumbs. 

If necessary, add salt, but don't forget that the cheese is already salty. 

Quickly grease a 28 cm pan. 

Spread the dough until it covers the entire pan and to ensure that it is intact. 

Bake in a preheated oven for about 15 minutes, between 180°C and 200°C, until the edges begin to brown. Remove from the oven, spread the sauce, toppings to taste and put back in the oven for another 10 minutes.

Low carb brownie

Ingredients:

  • 2 cups of 70% cocoa chocolate
  • 100g unsalted butter
  • 3 eggs
  • 1 cup almond flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon of vanilla essence
  • 2 tablespoons of natural sweetener
  • ½ cup chopped walnuts
  • 1 pinch of salt

Method of preparation:

Melt the chocolate and butter in the microwave or in a bain-marie 

If using the microwave, place it in the microwave for 30 seconds, remove, stir and place it back in until it melts. 

Beat the eggs in another bowl and mix them into the melted chocolate and butter. 

Add the remaining ingredients and place the dough in a rectangular baking dish lined with parchment paper. 

Spread the dough with a spatula. Bake in a preheated oven at 200 °C for 20 minutes. Serve immediately.
