LOLLIPOP: A DRIED APRICOT RECIPE WITH CHOCOLATE

Ingredients for this dried apricot recipe:

  • 100g chocolate
  • Apricots
  • BBQ sticks

METHOD OF PREPARATION:

  1. Place the chocolate in a container, place in the microwave and melt for 1 minute.
  2. Then just stick some dried apricots on barbecue sticks, dip the tip in melted chocolate and leave in the fridge.

STUFFED APRICOTS

Ingredients:

  • 300 g of hydrated dried apricots;
  • 200 g of cream cheese or mashed ricotta;
  • Fine herbs;
  • Oil;
  • 50 g chopped walnuts;
  • Chopped olives.

METHOD OF PREPARATION:

  1. Hydrate the apricots by immersing them in 2 liters of hot water for 1 minute and then in ice water with ice cubes, also for 1 minute.
  2. Mix the cheese, herbs, a drizzle of olive oil, nuts and olives. Place a spoonful of filling in each apricot.

COCONUT FLAN: DRIED APRICOT RECIPE WITH SYRUP

Ingredients:

  • Coconut flan: 1 bottle of coconut milk
  • 1 can of condensed milk
  • 1 can of whole milk (use the condensed milk can to measure)
  • 1 packet of colorless, flavorless gelatin powder
  • 5 tablespoons of water to hydrate the gelatin
  • Sugar if needed

Apricot Syrup:

  • 1 cup (tea) of dried apricots
  • 2 cups of water
  • 10 tablespoons of sugar

METHOD OF PREPARATION:

  1. For the Flan: in a bowl, dissolve the colorless gelatin in water, let it hydrate and place in a bain-marie for 5 minutes.
  2. Pour the gelatin and other ingredients into the blender for 1 minute and pour into a mold greased with coconut oil or unsalted margarine with a hole in the middle and refrigerate for 4 hours.
  3. Boil the two cups of water and add the apricots and let it boil for about 5 minutes or until they are hydrated.
  4. Blend in a blender to form an apricot cream, place back in a pan, add a little more water and sugar and cook again for approximately 5 minutes.

APRICOT PAVÉ

Ingredients for this dried apricot recipe:

  • Apricot cream
  • 1 box of condensed milk
  • 200 g of apricots, boiled and blended in a blender

  1. In a bowl, mix the condensed milk and apricots well. Set aside.

  2. Spread a layer of apricot cream over the cookies. Repeat the layers again, with the last layer being apricot cream. Refrigerate for about 3 hours.

ICE CREAM: DRIED APRICOT RECIPE WITH YOGURT

INGREDIENTS:

  • 1 and a half cups (tea) of apricots
  • Half a cup (tea) of sugar
  • 3 cups (tea) of water
  • 3 egg whites
  • 2 pots of plain whole yogurt

METHOD OF PREPARATION:

  1. Place the apricots in a pan, add the sugar and water and cook until soft.
  2. Remove from heat and reserve the cooking water and some apricots for decoration. In a blender, blend the remaining apricots until they form a puree and set aside.
  3. Bring the water used to cook the apricots to the boil again until it forms a thick syrup.
  4. Now in a mixer, beat the egg whites until stiff and, always beating, pour in the hot syrup, beating until it cools.
  5. Add the apricot puree and the Natural Yogurt, mixing gently. Place in a heatproof container and place in the freezer for about 5 hours.

RECIPE FOR DRIED APRICOTS STUFFED WITH WHITE BRIGADEIRO

Ingredients for the dried apricot and white brigadeiro recipe:

White brigadeiro

  • Half a box of condensed milk
  • Half a tablespoon of butter

Assembly

  • Half a cup (tea) of almond flour
  • 20 dried apricots, cut in half (without separating the two halves)

METHOD OF PREPARATION:

White brigadeiro

  1. In a pan, mix the condensed milk and butter.
  2. Cook over low heat, stirring constantly, until it reaches a consistency of brigadier soft (about 8 minutes).
  3. Remove from heat and let cool.

Assembly

  1. Mix the almond flour into the brigadeiro. Fill the dried apricots with this mixture. Serve.

LIGHT APRICOT PIE

Ingredients:

Pasta

  • 1 packet of Oatmeal and Honey cookies
  • 100 g margarine

Filling

  • 1 tablespoon unflavored gelatin powder
  • 4 tablespoons of water
  • 3 pots of traditional light Greek yogurt
  • 2 cups (tea) of ricotta passed through a sieve 500 g
  • 2 tablespoons lemon juice
  • Half a cup (tea) of culinary sweetener

Syrup

  • 100 g dried apricots
  • Half a cup (tea) of water
  • 2 tablespoons of culinary sweetener
  • 1 mint leaf

METHOD OF PREPARATION:

Pasta

In a blender, gradually blend the oat and honey cookies until you get a crumbly consistency. Remove from the blender, add the margarine and mix well.

Then, line the bottom of a springform pan and set aside.

Filling

  1. In a bowl, mix the gelatin with the water and heat in a bain-marie until dissolved.
  2. In a blender, beat the Greek yogurt, ricotta, lemon juice, culinary sweetener and finally, add the dissolved gelatin and beat a little more.
  3. Pour the mixture over the reserved dough. Refrigerate for about 4 hours or until firm.

Syrup

  1. In a saucepan, mix the apricots with the water and sweetener and let it cook for about 5 minutes over low heat.
  2. Let it cool and blend until smooth. Cover the pie, garnish with mint and serve.
