1 – Pesto sauce

- 4 tablespoons white wine vinegar.
For this béarnaise sauce, use a small saucepan and heat it with onion, pepper, 1 tablespoon of tarragon, white wine, vinegar, salt, bay leaf and thyme.
Allow the liquid to reduce until only a tablespoon remains, then strain to remove what is left.
