- 1 cup of black olives;
- 4 boiled eggs, sliced;
- 1 green pepper, sliced;
- 1 red pepper, sliced;
- 1 yellow pepper, sliced.
Now to prepare this recipe, first of all, you will need to place the cod in a pan, with water halfway up.
Then let it cook for 20 minutes and use a fork to check if it is firm. When it reaches this point, set aside.
In the next step you will have to cook the potatoes, take a pan, put the potatoes and cover with water.
And let it cook until it is al dente. That is, when the potatoes are cooked they are soft, drain and set aside.
In another pan, add a dash of olive oil and add the sliced onions, also add the bell pepper and black pepper to sauté.
Once they are sautéed, start preparing the baking dish by placing the sliced potatoes on the bottom and then add half of the sautéed peppers and the cod fillets on top.
Cover the cod with the remaining peppers, add the boiled eggs on top and the olives, and don't forget to add olive oil on top as well.
After that, put the baking tray in the oven for at least 40 minutes and finish with chopped parsley.
