- 150 g butter or margarine
- 250 g of wheat flour
- Water with 1 pinch of salt
- 1 yolk
- 80 grams of cornstarch
- 1 liter of cream
- 12 gems
- 300 g of sugar
- Liquid vanilla
- Lemon Peel Zest
Preparation of the Belém Pastry Dough
- First, on a clean, flat surface, make a mound of flour.
- Then make a hole in the middle.
- After that, add an egg yolk and water to make the dough malleable.
- Furthermore, roll out the dough and cover with 50g of butter or margarine.
- Fold until you have three layers of dough
- In short, do this movement twice, placing margarine or butter on top each time.
- Roll out the dough again
- spread the butter and roll up like a roulade
- Cut the roulade into a 2cm thick piece
- Spread each round on the bottom of small molds, covering the sides
Preparation of the filling for Pastéis de Belém
- First, put cornstarch, cream, egg yolks and half the sugar in a pan.
- After that, heat until it boils
- Turn off the fire
- Then add the rest of the sugar.
- In addition to the bone, add a few drops of liquid vanilla.

- Turn off and place on the dough rounds.
