Ingredients to prepare simple shrimp vatapá:

  • Dried shrimp – 500 g
  • Stale French bread – 8 units
  • Chopped onion – 2 units
  • Chopped peeled tomatoes – 2 units
  • Coconut milk – 1 glass
  • Palm oil – 1 glass
  • Small red pepper – 1 unit
  • Small green pepper – 1 unit
  • Butter – 2 tablespoons
  • Green smell
  • salt
  • Black pepper

METHOD OF PREPARATION:

  1. Start preparing the vatapá by cutting the bread into small pieces or making slices of it and hydrating it in coconut milk with 4 glasses of water, set aside.
  2. Now chop the onion and peppers and, in a large pan, sauté them in butter until they soften.
  3. Then add the shrimp (without the heads and tails), the tomatoes, 2 to 3 tablespoons of palm oil and sauté again for 2 to 3 minutes.
  4. While it cooks, blend the breads that were soaking in coconut milk and water in a blender.
  5. Then add the sautéed shrimp vatapá to this cream and let it cook until it thickens.
  6. At this point, add the remaining palm oil and adjust the seasoning to your taste using salt and pepper.
  7. Finally, remove from heat and mix the vatapá with the chopped parsley. Serve hot with white rice.

Additional Information:

  • Cooking: To ensure perfect cooking, always stir your vatapá to prevent the bottom of the pan from burning.
  • Consistency: the harder the bread is, the more consistency it will bring to your vatapá. If it is softer, reduce the amount of water when hydrating.
