- Lentils – 1 cup

- Medium red pepper – ½ unit (sliced into thin strips)

- Garlic – 3 cloves (2 whole and 1 finely chopped)

- Vinegar – 1/4 cup (any type)
- Olive oil – 1/4 cup + 2 tablespoons for sautéing
- Lemon juice – 1 tablespoon
- Salt to taste
- Black pepper to taste
METHOD OF PREPARATION:
- Start by cooking the lentils with lots of water and no salt. Cook for just 15 minutes in boiling water, or until al dente.
- Then drain the lentils and place them in cold water so that the cooking process stops. Then drain well.
- Then sauté over low heat, with the carrot, pepper, 2 cloves of garlic with 2 tablespoons of olive oil, and stir occasionally, keeping the pan covered, until the vegetables are softened.
- After seasoning using salt and pepper, add the onion to season with a good portion of salt and soak in the vinegar, until it softens and takes on another color.
- Then drain the onion, rinsing it in water. Then add the olive oil, lemon and finely chopped garlic clove and mix using a fork.
- To finish, mix all the ingredients once the carrot and pepper have cooled, adjust the salt and pepper and serve immediately.
