Ingredients needed for the Minas Gerais pie with pineapple:
For mass:
- 04 eggs (whites and yolks separated)
- 03 cups (tea) sugar
- 1 ½ cup (tea) of milk
- 2 tablespoons of margarine/butter
- 03 cups (tea) of wheat flour
- 1 tablespoon of baking powder
For the pineapple syrup:
- 2 pearl pineapples
- 350 to 450 ml water
- 3 tablespoons sugar
- 1 cinnamon stick
- Carnations
For the pineapple pie filling:
- 2 cans of condensed milk
- 06 egg yolks (reserve the whites)
- 03 tablespoons of diluted cornstarch
- 2 cans of cow's milk (Measuring can)
- Vanilla drops (optional)
Roof:
- 6 egg whites
- 1 can of whey-free cream (cream)
- 12 tbsp sugar
- grated coconut
METHOD OF PREPARATION:
- Start by preheating your oven (200ºC) and grease and flour a large rectangular pan and set aside.
- Then, place the milk and margarine on the heat until it boils and then beat the egg whites until stiff, add the egg yolks one at a time and continue beating.
- Now add the sugar, little by little, always beating. Also add the wheat flour, little by little, be careful because the dough will be really thick.
- Then add the milk that has already boiled along with the margarine/butter. As the last item, add the yeast.
- Then transfer this mixture to the reserved pan (already greased and floured) and place in the preheated oven to bake (do the toothpick test).
Pineapple Syrup:
- While the cake is baking, peel the pineapples and remove their 'eyes'. Then cut them into small squares and discard the core, using all the juice that comes out of them.
- Now place in a pan, with water (400 ml) and 3 tablespoons of sugar, some cloves and the cinnamon stick.
- Heat the pan, half covered, boiling for a few minutes, until it reaches a point where the water dries up and forms a thicker syrup with a pineapple flavor, without letting the pineapple melt, we need small pieces.
- Check if the cake is baked, and if so, let it cool, dividing it in half and transferring it to a large container, leaving half of the cake facing down on the 'crust' side and adjusting the size.
- Spread the pineapple syrup over the cake, making sure the syrup is absorbed into the entire cake, making it moist. Set aside.
- So use the same pan in which you prepared the syrup, adding the filling ingredients. The cornstarch should be diluted using the cans of cow's milk.
- Then put it on low heat until it thickens, stirring constantly so that it doesn't stick to the bottom of the pan.
- Pour over the pineapples and wait for it to cool naturally and then put it in the blender to make the egg whites in snow, continuing to beat and add the sugar at the end.
- As soon as it stops beating, gently add the can of cream. Then pour it over the condensed milk cream that has already cooled.
- Then sprinkle the grated coconut generously, along with the grated fresh coconut, which gives a divine touch.
- Finally, put it in the fridge and you can leave it overnight and then your Minas Gerais pie with pineapple is ready.
