For the Dutch Pie Base:

  • 20 units of Maria or cornstarch biscuits
  • 4 tablespoons unsalted butter or margarine
  • 1 packet of Amori Krokitos cookies (80g) or other cookies that contain chocolate

For the Cream:

  • 1 can of condensed milk (395g)
  • 1/2 packet of unflavored gelatin (6g)
  • 1 cup of whole milk (240ml)
  • A unit of gem
  • 1 can of cream (200g)
  • One tablespoon of cornstarch
  • 1 teaspoon vanilla essence

To the roof:

  • 200g of semisweet chocolate
  • 1 box of cream (200g)

METHOD OF PREPARATION:

Dutch pie base:

  1. First, crush the Maria biscuits and add melted butter and mix. Spread this mixture on the bottom of a 22cm diameter springform pan and press down firmly.
  2. Once transferred to a high oven for 5 minutes, remove and let cool completely. When the pan has cooled, arrange the sides with the Amori cookies inside the pan, with the chocolate part facing outwards, press firmly against the base to firm it up and then set aside.

Cream:

  1. Add the condensed milk, milk and cornstarch to a pan and place a sieve on top of the pan and add an egg yolk, piercing it with a knife and letting the yolk drain.
  2. Once drained, remove the strainer and discard the yolk skin. Place the pan on the stove. Stir constantly, using a whisk or other whisk, until it boils and thickens.
  3. Then, turn off the heat and let it cool down a bit. Then add the cream with the vanilla essence. And once again let the cream cool down. Put 3 tablespoons of water in a small bowl, add and mix the gelatin in the water and microwave for 10 seconds or do this in a bain-marie until it melts.
  4. Then, add the gelatin, gradually incorporating it into the cream, mix well. Pour the cream over the biscuit base and spread it out. Store in the refrigerator for 2 hours.

Roof:

  1. Break the chocolate into small pieces and place it in a container to melt in the microwave for 30 seconds and remove, stir and return for another 30 seconds until completely melted, or do this in a bain-marie.
  2. Then add the melted chocolate with the cream to form a cream.
  3. Immediately after removing the pie from the refrigerator, carefully pour the topping over the white cream. Then, cover with a lid or plastic wrap. Return to the refrigerator to chill for another 6 hours, then unmold and serve.
