For mass:

  • Wheat flour – 2 and œ cups (300 g)
  • Sour cream – 3 tablespoons (30 g)
  • Cold butter – 7 tablespoons (140 g)
  • Salt – 1 teaspoon (5 g)
  • Egg – 1 unit

For the cheesecake filling:

  • Fresh Minas cheese – 450 g
  • Grated parmesan cheese – 80 g
  • Eggs – 4 units
  • Whole milk – 1 cup (240 mL)
  • Heavy cream – 1/3 cup (80 mL)
  • Salt – approx. 1 teaspoon (5 g)
  • Nutmeg to taste

METHOD OF PREPARATION:

Cheese pie dough:

  1. Start by placing the wheat flour and salt in a bowl and mixing them together. Then add the butter, cream and lightly beaten egg. Mix with your hands until smooth.
  2. Then transfer the dough to a floured surface and use a rolling pin to roll it out.
  3. Now leave the bottom (removable) and the sides of the pan (21 cm in diameter) covered, do this with the dough itself. If necessary, make seams in the dough.
  4. Then remove any excess dough with a knife and transfer to a baking tray to chill for 1 hour.
  5. After making holes in the bottom of the pie, finally place it in the preheated oven (200ÂșC) for 15 minutes. Remove from the oven and set aside immediately.

Filling:

  1. For the filling, take the Minas cheese in a bowl and mash it well (do this with a fork to make it crumbly) and add the lightly beaten eggs, milk, cream, grated Parmesan cheese and sprinkle with a pinch of salt and nutmeg.
  2. Once you have incorporated them all, spread them over the previously baked dough.
  3. Then, just bake in the preheated oven for 50 minutes or until golden brown. Before unmolding, wait about 30 minutes so that the dough does not break.
