1 – Low carb chicken soup

  • 2 liters of water;
  • ½ cup of chopped parsley;
  • 1 chopped cauliflower;
  • salt;
  • black pepper to taste;
  • 500 grams of shredded chicken;
  • 2 medium carrots, diced;
  • 1 onion, diced;
  • 2 crushed garlic cloves.

In a pan, place the onion, garlic, carrot and water and cook until the carrot is soft.

When you reach this point, add the cauliflower, salt, pepper and the chicken cut into pieces or chopped.

Finally, add the parsley, mix and it will be ready to serve. In addition, the soup can be frozen to eat whenever you want.

2 – Pumpkin and ginger soup

  • ½ teaspoon of olive oil;
  • 1 clove of garlic, chopped and crushed;
  • 2 chopped kale leaves;
  • ½ teaspoon grated ginger;
  • black pepper to taste;
  • 2 cups of boiling water;
  • ½ medium onion, chopped;
  • ½ teaspoon nutmeg;
  • ½ kg of peeled and chopped pumpkin.

For this recipe you will need to start by sautéing the onion and garlic in olive oil, then add the boiling water.

Then add the pepper and the other chopped ingredients such as the cabbage and pumpkin, add salt if necessary and let it cook for approximately 30 minutes.

After this time, add the nutmeg and ginger to your soup and let it cook for another 10 minutes.

3 – Tomato and basil soup

  • 1 tablespoon of olive oil;
  • salt to taste;
  • pepper to taste;
  • 2 tablespoons chopped basil;
  • 4 cups of water;
  • 2 cloves of chopped garlic;
  • 500g of chopped tomatoes, skinless and seedless;
  • 1 medium onion, chopped.

In a pan, heat the olive oil, add the onion and garlic and sauté until they start to turn golden.

Then add the chopped tomato, water, seasonings such as salt and pepper, and let it boil.

Finally, cook with the pan covered for approximately 10 minutes, and add the basil and blend in a blender until smooth.

4 – Beetroot soup

  • salt to taste;
  • 1 onion;
  • 1 tablespoon of olive oil;
  • 500g of beetroot;
  • 1 and a half liters of water;
  • 2 tablespoons of lemon juice;
  • ½ tablespoon cornstarch.

In the pressure cooker, add the olive oil and heat over high heat. Sauté the onion until it becomes transparent, then add the lemon juice, beetroot and water.

Let it cook for another 15 minutes after it starts to boil. When it does, transfer the soup to a blender and blend until smooth.

When it is homogeneous, return to high heat and add the already dissolved cornstarch.

Let it cook again until it thickens, add salt and it will be ready to serve.
