Risotto is a recipe that can be made in different ways, with various ingredients, but what could beat the cheese?

The origin of risotto
Risotto is our Brazilian way of speaking “risotto”, an Italian word meaning small rice.
And since it came about many, many years ago, risotto does not have a concrete and extremely certain origin. But we can have some ideas of where it came from.
For example, some believe that the recipe must have emerged around the 16th century, in Milan, due to a mistake by master Valério de Fiandra, who was responsible for the cathedral's stained glass windows.

And what was a story of jealousy, and an intention to spoil his daughter's wedding dinner, Valerio threw saffron into the risotto, and in the end, it was delicious, known as Risotto alla Milanese.
In Brazil, it emerged in the 1980s, as a side dish made with leftover rice and whatever else was available. But over time, it became a main dish and highly appreciated.
Cheese risotto
But now, leaving the story behind, let's see what the ingredients of cheese risotto are:
- 3 American cups of rice;
- 1 chopped onion;
- Chopped mozzarella to taste;
- Grated cheese to taste;
- 1 teaspoon of ground turmeric;
- 2 chicken stock cubes;
- 1 teaspoon of hot paprika;
- 4 tablespoons of butter;
- 1 and ½ liters of boiling water.
Start by sautéing the onion with 2 tablespoons of butter, until it is golden brown and add the rice, saffron and spicy paprika to sauté together for at least 2 minutes.
In the boiling water, dissolve the chicken broth and add it to the rice little by little.
Cook well, but do not let the water dry out completely. When it is cooked, make a hole in the middle of the rice, add the remaining butter and grated cheese.
Stir well so that the cheese is incorporated and melted, as well as the butter. When it is creamier, turn off the heat and add the mozzarella pieces to melt more.
Once it has melted, turn off the heat and serve. Many people also add bacon and mushrooms to enhance the sauce.
This cheese risotto is creamy, flavorful, and perfect as a main course or side dish.
Furthermore, wine and risotto form a classic and delicious combination, the choice can end up enhancing the flavors of the risotto, complementing your meal.
For a cheese risotto, full-bodied white wines are best suited, the best known being Chardonnay, and if you prefer red, you can go for a Cabernet Sauvignon which is also delicious.
