Check the ingredients:
- 300 g of peeled cassava;
- 100 ml of warm water;
- 200 ml of warm milk;
- 1 lightly beaten egg;
- 30 g of melted butter;
- 10 g of dry biological yeast;
- 3 tablespoons of sugar;
- ¾ tablespoon of salt;
- 1 kg of wheat flour;
- melted butter to grease the pan.
To start, you will need to cook the cassava without the skin until it is soft. While still hot, place the cassava in a bowl or bowl, knead well and let it cool for a while.
Add water, milk, egg, butter, sugar and ferment, and with a whisk you will mix the ingredients and let it dissolve.
When it is well incorporated, without lumps, mix with your fingertips and add a cup of flour along with the salt.
Keep adding the flour until everything that was separated is finished, do this and knead until the dough starts to stick to your hands. You may need to add more flour to reach this point.
When it reaches this point where it sticks to your hands, place it on a lightly floured counter and knead for 15 minutes.
Then return the dough to the bowl, cover with plastic wrap or a towel and leave it aside to rise for 1 hour or 1 hour and a half, so that the dough doubles in volume.
Let it rise in a closed place, such as the oven or microwave, so that it ferments properly.
When it rises, it's time to return the dough to the counter, then sprinkle it with flour again, add the dough and press a little to remove the air from inside.
Divide into small balls, according to the size of the bread of cassava you want.
Shape them any way you want and place them side by side on the baking sheet in a greased pan. Cover with a cloth and let it rise for another 30 to 40 minutes before putting it in the oven.
When this time has passed, place in the preheated oven at 200°C for 5 minutes, after 5 minutes, lower the temperature to 180°C and let it bake for another 30 minutes.
As soon as the top is golden, you can remove it from the oven, spread a little butter on top and bake for another 2 minutes until it becomes more golden.
