We are going to bring you a gnocchi recipe that is very light and can be served in many ways, this is the recipe for gnocchi that melts in your mouth and will grace your taste buds.

Ingredients for melt-in-your-mouth gnocchi:

  • 1 and ½ kg of English potatoes (more or less 8 medium units)
  • 2 egg yolks (medium eggs)
  • 120 grams of sifted wheat flour (approximately 1 teacup)
  • Salt to taste

METHOD OF PREPARATION:

  1. Start by cutting the potatoes into large pieces and place them in a medium saucepan, cover with water and bring to a boil over medium heat. Once boiling, add 1 ½ tablespoons of salt and reduce the heat to low.
  2. Cook for about 25 minutes until the potatoes are soft. Use a fork to poke them to see if they are cooked. Place the potatoes in a large bowl and use a ricer to mash them.
  3. Now add 2 teaspoons of salt and ¼ teaspoon of wheat flour to season the potato dough.
  4. Mix with your hands or a spoon. Add the egg yolks and knead again, incorporating them into the potato dough.
  5. Continue mixing, gradually adding the remaining wheat flour, until the dough reaches a point where it can be rolled and made into gnocchi.
  6. Then, on a floured countertop or sink, make cuts in the dough by rolling them with your hands and then shape them into little balls. The rolls should be 1 cm in diameter, and the cuts in each gnocchi should be around 2 cm.
  7. To prevent sticking, sprinkle a little wheat flour on the counter and/or your hands. Try not to add too much flour to the dough. Grease and flour two baking sheets to place the gnocchi balls on.
  8. Heat a large pot with a lid over the stove with water. When it boils, add salt and, using a slotted spoon, dip 15 to 20 gnocchi balls into the water, cooking them until they float. Then, return with more balls.
  9. Using a slotted spoon, remove the gnocchi and transfer them to the greased baking dish. Repeat this process until all the gnocchi are gone and then dip them in the boiling water.
