Ingredients for 4 cheese gnocchi:

  •  1 kg of potato gnocchi
  •  500 ml whole milk
  •  1 tablespoon of butter
  • 100 g parmesan cheese
  •  1 tablespoon of wheat flour
  • 100 g provolone cheese
  •  salt to taste
  •  100 g mozzarella cheese
  •  ground black pepper to taste
  •  freshly grated nutmeg to taste
  •  100 g gorgonzola cheese

METHOD OF PREPARATION:

  1. Start by bringing the water to a boil. Once it does, add the salt and the gnocchi. Now, in a pan, make the Roux (RÚ as it is called) and add a spoonful of butter, letting it melt. Then, add a spoonful of wheat flour and stir to cook the flour.
  2. Next, add the milk to the mixture and mix quickly, then season with a pinch of salt, black pepper and nutmeg (these last two freshly ground).
  3. When the mixture thickens, add the cheeses: mozzarella, gorgonzola, parmesan and provolone. As soon as they melt, turn off the heat, drain the gnocchi and then add the sauce to a pan.
