Ingredients that will be used to prepare the pan-fried gnocchi:

  • 800g of cooked and mashed potatoes
  • 1 egg
  • 1 tablespoon of butter
  • 2 tablespoons cornstarch
  • 2 tablespoons of wheat flour
  • Salt and grated nutmeg to taste
  • Butter for greasing

For the filling:

  • 2 cups (tea) of cooked and shredded chicken
  • 1 cup (tea) of catupiry
  • 1 seedless tomato, chopped
  • 1/3 cup (tea) chopped basil
  • Salt and oregano to taste

METHOD OF PREPARATION:

  1. Let's start with the filling, mixing the chicken, catupiry, tomato, basil, salt and oregano in a bowl. Set aside.
  2. Then, in another bowl, mix the mashed potatoes, eggs, butter, starch, flour, salt and nutmeg.
  3. Then assemble your gnocchi in a medium non-stick frying pan that has already been greased, with a layer using half of the mashed potatoes and, pour the filling over this layer and pour the remaining mashed potatoes.
  4. Now just cook over low heat for 10 minutes or until it becomes firmer and takes on a golden appearance.
  5. Finally, brown the remaining side (you can use a plate to turn it over) ensuring that both sides are cooked. Transfer to a plate and decorate as you like before serving.
