Shrimp moqueca: a mouth-watering recipe

This recipe takes about forty-five minutes to make and usually serves 8 or more people.

For this you will need the following ingredients:

  • 500g of medium shrimp;
  • 2 onions;
  • salt;
  • Black pepper;
  • 1 lemon;
  • 4 tablespoons of palm oil;
  • 4 tablespoons of olive oil;
  • 1 cup of parsley.
  • 1 cup of coriander;
  • 1 green pepper;
  • 1 red pepper;
  • 4 ripe tomatoes;
  • 3 cloves of garlic;
  • 300 milliliters of coconut milk.

And to start preparing your delicious, and very tasty, shrimp moqueca, start by cleaning the shrimp and seasoning them with salt, lemon juice and pepper, leaving them aside.

Now you will need to cut or chop, whichever you prefer, the onions, garlic, tomatoes and peppers from the ingredients, remember to throw away the seeds.

In a large pot, clay if possible, or a frying pan, place your onion and garlic to sauté in olive oil.

When the onion starts to soften, you should add the tomatoes, peppers and coconut milk, leave this mixture in the pan until it starts to boil.

The next step will be to add the cleaned shrimp and the palm oil, at this stage you should let it cook over medium heat until they are cooked.

During the cooking process, you should check the taste to make sure the salt is good, as well as the other seasonings. When it is close to being cooked, add the coriander and parsley.

After about 1 or 2 minutes, your shrimp moqueca will be ready to be consumed with white rice or farofa.
