- 1 tablespoon of olive oil
- 2 tablespoons of butter

- 2 garlic cloves

- 2 cups homemade chicken (or vegetable) broth
- Pinch of freshly grated nutmeg, to taste

METHOD OF PREPARATION:
- Start by washing the spinach leaves in running water and set aside. Then, take a large peeled onion, cut it in half and slice the other half very thinly. Also, peel and crush the garlic.
- Then place a large pan over medium heat, add the olive oil and butter and heat until the butter melts. Add and sauté the onion and garlic until golden brown.
- Once you add the flour and mix well, cook on low heat for a minute and continue stirring, just to remove the raw taste of the flour.
- Then add the chopped spinach and cook for 5 minutes until it wilts. Now add the cream, chicken broth, grated nutmeg, salt and pepper to taste.
- Then let it cook until it thickens, for at least 6 minutes.
- Then continue cooking until the cream reaches a consistency that suits your taste. If you wish, you can blend the cream in a blender, which works very well.
- Finally, adjust the salt and seasoning by tasting the cream. Finally, serve immediately.
