Ingredients for creamy corn cream:

  • 1 and ½ cups (tea) of fresh, soft corn kernels, either canned or frozen (2 to 3 ears)
  • 2 and ½ cups
  • 2 and ½ cups (tea) of milk (600 ml, the milk can be whole, skimmed or lactose-free)
  • 25 g butter (salted or unsalted) salt

METHOD OF PREPARATION:

  1. The first step is to blend the milk with half of the corn in a blender until it reaches a smooth cream consistency.
  2. Then, strain the cream through a sieve, squeezing it well and discarding all the pulp (skins and lint) that remains in the sieve. Then, reserve the dense liquid (it is almost like corn juice).
  3. Then, melt the butter in a medium saucepan, and add the remaining corn and a little salt (about 2 pinches). Let it cook for about 5 minutes, until the corn changes color and texture, no longer having that raw corn taste.
  4. Finally, add the reserved whipped cream to the pan and stir well. Leave it on the heat until it boils and thickens. After that, check if it has enough salt and remove from the heat and serve immediately.

Additional Information: Many people ask if corn cream can be made vegan? The answer is yes, just replace the butter with vegetable oil or olive oil and replace the milk with water. But the cream will have a different flavor, because the butter and milk intensify this flavor.
