Ingredients to prepare Canjiquinha Mineira:

  • Yellow corn hominy – 2 cups of tea (cleaned and washed)
  • Lard – 1 tablespoon
  • Chopped bacon – 200 g
  • Minced garlic – 2 cloves
  • Chopped onion – 1 unit
  • Paprika – 1 tablespoon
  • Medium pepperoni sausage – 1 unit (chopped)
  • Smoked pork ribs – 300 g (cut into strips)
  • Bay leaf – 1 unit
  • Cumin – 1 pinch
  • Chopped chili pepper – 1 unit
  • Tomato paste – 2 tablespoons
  • Chopped tomatoes – 3 units
  • Hot water until covered
  • Chopped parsley, chives and coriander to taste
  • Salt to taste

METHOD OF PREPARATION:

  1. Start in a bowl, placing the already clean and washed yellow corn grits.
  2. Afterwards, add water to soak for around 30 minutes. After that, drain and set aside.
  3. Then, heat a pressure cooker over medium heat, add the lard, the chopped garlic cloves, the chopped onion and the paprika and make a sauté with them.
  4. Now also add the bacon, pepperoni and smoked pork ribs and sauté again. Then add the chopped tomatoes, tomato paste and incorporate them.
  5. As soon as it is covered with boiling water, add the bay leaf, cumin and finely chopped chili pepper, close the pan and as soon as the pressure starts to release, leave it for just 10 minutes.
  6. When you have completely removed the pressure and opened the pan, add the hominy.
  7. Then cook over low heat, stirring constantly, until the bottom of the pan appears and reaches the tender point, which may take about 10 minutes.
  8. Finally, add pinches of chopped parsley, chives and coriander to your taste and adjust the salt, then serve.
