Preparing our canjica with peanuts is very simple, because we will use the pressure cooker, speeding up the process even more. Come see how easy it is to make this recipe!

Ingredients for Canjica with Peanuts:

  • 250g of corn for canjica
  • hot water (enough to cook the corn)
  • 1 pinch of salt
  • 1 cinnamon stick
  • 1/2 liter of hot milk
  • 1 can of condensed milk
  • 1 cup (tea) of roasted and crushed peanuts
  • 1 tablespoon butter or margarine

METHOD OF PREPARATION:

  1. In a container, place all the canjica and cover with water, leaving it to soak for about 8 hours.
  2. After this time, drain and discard the canjica water and transfer the corn to a pressure cooker. Pour hot water until there is about three fingers of water above the corn. Cover the pan and cook over medium heat.
  3. After reaching pressure, cook for 40 minutes, then turn off the heat and wait for the pressure to release naturally. Add the cinnamon stick, a pinch of salt and mix a little more. If you see that you need more water, add it (2 fingers above the corn).
  4. Cover the pan again and cook for 20 minutes over low heat. Meanwhile, if you don't have crushed peanuts, grind them in a blender until they are well crushed. 
  5. After 20 minutes, open the pan (make sure the pressure has been released), add the butter and mix. Then add the condensed milk, the hot milk and the crushed peanuts;
  6. Mix all these ingredients well and cook over low heat again, stirring occasionally, with the pan uncovered, until it boils or thickens (don't let it thicken too much, as the canjica hardens more when it cools).
  7. Finally, just turn off the heat and serve, hot or cold, as you like.
