1 – CHRISTMAS DINNER RECIPES | CHRISTMAS TENDER
Ingredients:
- Tenderloin – 1 kg
- Onion slices – 1 unit
- Sliced garlic – 3 cloves
- Very ripe pineapple – 1 unit
- Olive oil – 30g
- White wine – 500 ml
- Cloves to taste
- Rosemary to taste
- Thyme to taste
Method of preparation:
- Start by using the tip of a knife to make very shallow lines on the top of the tenderloin. Then, start sticking cloves into the holes.
- Now put the olive oil, white wine, onion rings, garlic, rosemary and thyme in a baking dish and as a last item place slices of pineapple.
- Then place the ham on a baking tray lined with aluminum foil and bake for 40 minutes. Finally, slice your ham to serve!
2 – CHRISTMAS TURKEY
Ingredients:
- Turkey – 1 unit weighing approximately (4 kg)
- Dry white wine – 1 bottle
- Orange juice – 6 units
- Chopped onions – 3 units
- Garlic – 4 cloves
- Bay leaves – 4 leaves
- Powdered chicken broth – 4 cubes
- Black pepper – 1 pinch
- Margarine – 1 500 g pot (good quality)
- Sugar – 1 level dessert spoon
Method of preparation:
- Rinse your turkey under running water to remove all the seasoning. Now it's time to make a marinade using the ingredients on the list, except the sugar.
- Leave it to marinate for about 2 days, and once that's done, cover it with a good amount of margarine, poking it so that the margarine gets inside, especially the breast.
- To bake, cover with aluminum foil, adding the marinade as well, leave on low heat and keep basting with the broth from the tray, preventing it from drying out until the pin is lifted.
- As soon as it rises, make a mixture of sugar (3 tablespoons) and margarine, spread it on top and leave it on the heat, removing the aluminum paper so that it browns.
- Finally, use the remaining broth from the tray to prepare a delicious accompanying sauce, making your dish even tastier.
3 – CHRISTMAS DINNER RECIPES | PARTY FAROFA
Ingredients:
- Ready-made farofa – 1 500 g package
- Pitted dried black plums – 1 cup
- Butter – 5 tablespoons
- Medium onion, finely chopped – 1 unit
- White raisins – ½ cup
- Green olives, sliced – ½ cup
- Boiled and chopped eggs – 3 units
- Chopped chives – 2 tablespoons (parsley and chives)
- Warm water – 1 ½ cup
Method of preparation:
- Start by placing the plums in a bowl, add warm water until covered, leaving to soak for around 15 minutes or until soft.
- Then, after draining and chopping, add the butter to the pan and heat it over medium heat. Add the onion and brown it lightly, stirring constantly.
- Turn off the heat, mix together the plums, raisins, olives, eggs and parsley. Gradually add the ready-made farofa and stir constantly.
4 – BASKETS WITH SALT SAUSAGE
Ingredients:
- Pastry dough – 500 g
- Shredded chicken breast – 1 cup
- Cooked and diced carrots – 2 units
- Diced celery – 1 teacup
- Red pepper cut into cubes – 1 unit
- Green pepper cut into cubes – 1 unit
- Chopped green olives – 1/2 cup
- Raisins – 1/4 cup
- Green apple cut into cubes – 1 unit
- Chopped parsley – 2 tablespoons
- Mayonnaise – 1 teacup
- Salt to taste
Method of preparation:
- Let's start this recipe by cutting the pastry dough into squares (10 cm x 10 cm) and shape them into pie shapes.
- Place them on a baking tray and let them bake in a preheated oven (200ºC) until golden brown and then unmold to set aside.
- Then add the chicken breast, carrot, colored peppers, celery, green olives, raisins and apple to a container.
- To finish, continue seasoning with salt and parsley. Cover with mayonnaise and fill the pastry baskets with the filling and then serve!
5 – CHRISTMAS SALAD
Ingredients:
- Grated celery – 2 stalks
- White raisins – ½ cup
- Chopped walnuts – ½ cup
- Large green apples – 2 units (still with skin and cut into cubes)
- Lemon juice – 1 unit of fruit
- Olive oil – 3 tablespoons
- Ground black pepper – 1 teaspoon
- Salt – 1 teaspoon
- Chopped fresh parsley – 1 tablespoon
- Whole biquinho pepper – 15 units
- Cottage cheese – 1 teacup
- Straw potatoes – 1 packet
Method of preparation:
- First, in a salad bowl, mix together the celery, raisins, walnuts and apples.
- Then, season with lemon juice, olive oil, ground pepper, salt, parsley, pepper and cream cheese.
- Finally, with everything well mixed, leave it in the refrigerator. When serving, sprinkle the straw potatoes and mix again and it will be ready.
