Ingredients for the cod with potatoes recipe:
- Cod – 2 pieces
- Large potato – 1 unit
- Onion – 1/2 unit
- Oil
- Garlic powder
- salt
- Red pepper to taste
Method of preparation:
- Start in a Pyrex dish, placing the sliced onion along with a small amount of olive oil.
- Then, arrange the cod fillets on top of it, and on the sides, the potatoes already cut into pieces. Then sprinkle with garlic and salt.
- Now add the peppers and drizzle with olive oil. Place in the oven until cooked through.
Recipe for Baked Cod with Potatoes and Cornbread Crust
Ingredients:
- Cod – 1 large piece
- Onion – 1 unit

Method of preparation:

Recipe for Baked Cod with Breadcrumbs
Ingredients:
For the cod:
- Soaked cod – 4 pieces
- Onions cut into half moons – 2 units
- Sliced garlic – 2 cloves
- Bay leaf – 2 leaves
- White wine – 1 glass
- Oil
- Sweet paprika powder
For the crumbs:
- Crushed garlic – 2 cloves
- Chopped cornbread – ½ unit
- Cooked black-eyed peas – 500 g
- Sautéed cabbage with caldo verde, steamed.

Method of preparation:

- Add the cod and a considerable amount of olive oil, adding white wine and paprika powder.
- After baking in the oven for around 30 minutes (200ºC), turn it over halfway through and pour over the sauce.

- In a large frying pan, add the olive oil and garlic until golden brown.
- Then add the cabbage and sauté it before adding the black-eyed peas and cornbread.
- Now add more olive oil and continue stirring well, serving the roasted cod next.
Recipe for Baked Cod with Cornbread
Ingredients:
- Cod fillets – 1 package
- Chopped onion – 100 g
- Minced garlic – 25 g
- Cornbread crumb – 1000 g
- White wine – 1 ½ glass
- Bay leaf – 1 leaf
- Olive oil – 250 ml
- salt
- Pepper
Method of preparation:
- To get started, arrange all the items on the list together to make the process easier.
- First of all, place the cod fillets on a tray and pour half a glass of white wine over them.
- Now season your loins with pepper, bay leaves and olive oil.
- Then, fry it and set it aside. Afterwards, set it aside and knead the pre-crumbled cornbread crumbs.
- Once mashed, add the remaining olive oil, finely chopped garlic and onion, along with a glass of white wine.
- Prepare the paste seasoning and using salt and pepper spread it to coat the cod fillets.
- Then place the tray with the loins in your oven until the cornbread crust is golden brown.
- If necessary, add heated olive oil along with chopped garlic.
- Finally, you can serve the cod with the potatoes you baked, along with half a portion of boiled eggs. Then, sprinkle with salt and enjoy.
Cod with potato gratin
Ingredients:
For the cod:
- Shredded cod – 1 kg
- Sliced onions – 2 units
- Olives – 1 package
- Cubes – 2 tomatoes
- Olive oil and seasoning by Edu Guedes
For the mashed potatoes:
- Boiled potatoes – 5 units
- Light cream – 1 box
- Light cream cheese – 1 pot
- Mozzarella – 100 g
- Boiled eggs – 2 units
Method of preparation:
Cod:
- First, sauté the onion in a good amount of olive oil, adding the cod, tomato and olives and sauté until the water evaporates…
- Pour a dash of olive oil into the bottom of a dish and turn the cod stew over.
Mashed potatoes:
- Then, mash or use a mixer to beat the potato with the cream.
- Then add the light cream cheese and Edu Guedes seasoning, adding a pinch of salt.
- Now with the puree added on top of the cod, on top of this puree add the light cream cheese, the grated mozzarella, the boiled egg, the onion and the olives.
- To finish, simply place the gratin in an oven heated to 200 °C until golden brown.
