1 – RECIPE WITH CALABRESA AND POTATO

  • Calabrian sausages – 2 units already cut into thick slices 
  • Potatoes cut into 4 – 500 g  
  • Garlic – 3 cloves  
  • Onion – 1 unit 
  • Tomato paste – 1 sachet  
  • Oil – 1 spoon 
  • Parsley and chives to taste 
  • Salt and black pepper to taste 

Method of preparation: 

  1. First of all, let the onion and garlic brown in the oil, then add the sausage and finish sautéing them. 
  2. Then, add the tomato sauce to the potatoes, adding salt and black pepper along with the parsley, and adding water to cover the potatoes. 
  3. To finish this recipe, cook for around 20 minutes, or until the potatoes are soft.

2 – CALABRESA BREAD 

Ingredients for the pepperoni recipe: 

  • 1 egg 
  • Wheat flour – 4 cups  
  • Salt – 1 teaspoon 
  • Sugar – 2 tablespoons  
  • Butter – 1 tablespoon (or margarine) 
  • Dry yeast – 1 packet  
  • Smoked and chopped calabresa sausage – 1 wedge  
  • Seasonings to your taste (oregano, parsley and various) 
  • warm water 

Method of preparation: 

  1. Initially, in a bowl, place the flour as the first item, then the sugar, then the salt with the yeast. Then add the butter, egg and stir. 
  2. Then, little by little add water to reach the desired consistency of the dough, without letting it stick to your hands. 
  3. Once you have kneaded it well, put the dough in the oven to rise for at least 30 minutes, depending on the temperature you set it to. 
  4. Now start rolling out the dough without making it too thin or too thick and add the filling, closing it like a swiss roll. 
  5. Finally, after it has risen for about 20 minutes, brush it with 1 egg yolk and sprinkle with oregano or something you like on top. Then, bake for about 20-30 minutes, until golden brown. 

3 – RECIPE WITH CALABRESA AND CREAMY TROPICAL RICE

Ingredients for the recipe with pepperoni and rice: 

  • Already cooked rice – 5 cups (or leftovers) 
  • Whole pepperoni – 1 unit  
  • Large carrot – 1 unit (chopped into small pieces) 
  • Green beans cut into slices – 10 units 
  • Chopped mozzarella – 200 g  
  • Parmesan cheese – 100 g  
  • Cream cheese – 1/2 cup  
  • Milk – half a cup  
  • Heavy cream – 1/2 cup  
  • Chopped tomatoes – 2 units 
  • Red pepper – 1/2 unit 
  • Yellow pepper – 1/2 unit 
  • Onion – 1 unit 
  • Sweet corn – 1 can  
  • Salt, black pepper, nutmeg to taste 
  • chives and parsley to your taste 

Method of preparation: 

  1. Start by frying the sausage with the onions and set them aside. Then, in a bowl, add the rice, mixing it with the milk, cream, cream cheese, salt, black pepper and nutmeg. 
  2. Then, in a dish already greased with butter, add the rice and leave it alternately with the carrots, green beans, peppers, mozzarella, tomatoes and corn. 
  3. Finish by adding the rest of the rice and on top, place the fried and sifted calabres sausages along with the parmesan cheese, and bake for 30 minutes. 

4 – RECIPE WITH CALABRESA AND PASTA IN THE PRESSURE COOKER 

Ingredients: 

  • Pasta – 1 package (penne, screw, or bow tie) 
  • Tomato sauce – 1 box (extract or pulp) 
  • Water - 2 boxes (the same size as the tomato sauce box)  
  • Cream – 1 can  
  • Chopped medium onion – 1 unit  
  • Pepperoni cut into thin slices – 3 wedges  
  • Salt to your taste 
  • Oil or olive oil to sauté the onion and sausage 

Method of preparation: 

  1. First of all, in a pressure cooker, brown the onion with the sausage. Once golden, add the salt, the sauce, the two measures of water, the pasta and the cream. 
  2. This way, you can see how the pasta can be completely covered by adding more water. 
  3. Then, mix well with the salt and cover the pan you are using. 
  4. Once 5 minutes have passed, count when it starts pressure come out of the pan, making that hissing sound.

  • Coarsely crushed garlic – 1 clove  
  • Olive oil – 1 tablespoon  

Method of preparation: 

  • Let's start this pâté recipe by adding olive oil to the pan and adding the sausage so it can fry. 
  • Once the sausage is well fried, add the onion and garlic. Then, sauté these ingredients well and then remove them from the heat. 
  • Then, let it cool down and let it be well crushed, doing this in a blender or in one of those food processors, until it forms a paste-like consistency. 
  • After crushing, place the paste in a bowl and add the mayonnaise and milk cream. 
  • To finish your pâté, mix everything well, then put it in the fridge and, when it is very cold, you can serve it with a tasty bread or crackers such as toasted almonds.
