1 - Roasted eggplant
See the ingredients:
- ¼ cup of olive oil;
- 2 tablespoons of honey;
- 2 eggplants;
- ½ teaspoon of salt;
- ½ teaspoon of cumin.
Combine all the ingredients, and in a bowl start by adding the olive oil, honey, cumin and salt to mix well.

Reserve this mixture and wash the eggplants, after cleaning, cut them in half and make cuts like tic-tac-toe in the pulp, this will allow the sauce to penetrate better.
On a platter or baking tray, place the eggplants with the flesh facing up, and use a spoon to cover them with the sauce.
Place in the oven to bake in a preheated oven at 200° C for approximately 30 minutes, until the eggplants begin to turn golden and softer.
2 - Eggplant bruschettas
Bruschetta is a dish considered by many to be something fine and elegant, but it is very simple to make at home! See what ingredients you will need:
- 1 large eggplant cut into slices;
- Salt and black pepper to taste;
- Olive oil to taste;
- Coriander to taste;
- 2 cloves of garlic, squeezed;
- 100 grams of grated mozzarella cheese;
- 1 large tomato chopped into small cubes.
Start by cutting your eggplants into slices and placing them on a baking tray, season them on both sides with salt and black pepper, then bake at 200°C for 20 minutes.
While it's in the oven, start preparing the other part. In a bowl place the chopped tomato, garlic, coriander and oregano, also add a little olive oil and mix, if necessary add salt.
Once the eggplants are ready, place some of the tomato on top of the slices and sprinkle with cheese and oregano, put them back in the oven until the cheese melts and it's ready.
3 - Eggplant appetizer
Eggplant antipasto is a delicious dish that can be eaten with dishes, biscuits and bread, incredible and tasty. Check the ingredients:
- 3 large eggplants cut into strips;
- Black pepper, chimichurri and oregano to taste;
- ½ cup pitted olives;
- 1 yellow pepper cut into strips;
- 1 green pepper cut into strips;
- 1 red pepper cut into strips;
- 1 cup of olive oil;
- 2 onions cut into strips;
- ½ cup of vinegar;
- 2 tablespoons of squeezed garlic;
- 1 tablespoon of salt;
- 1 tablespoon of balsamic vinegar.
In a baking dish, place the first layer with the eggplant strips, and on top place a layer of peppers finishing with onion.
Drizzle with olive oil, vinegar, season with salt, oregano and whatever else you want. Then cover the baking tray with aluminum foil and place in a preheated oven at 150°C for up to 15 minutes.
When removed from the heat, add the olives, mix a little and cover again with aluminum foil to simmer for another 1 and a half hours, or until it starts to darken.
When it's ready, let it cool and store it in the fridge, then it will be ready and you can eat it however you want.
