- 520 g of wheat flour (4 and 1/3 cups)
- 240 mL of warm water (1 cup)
- 26 mL of Oil (2 tablespoons)
- 5 g of Salt (1 teaspoon)
- 50 mL of Cachaça (1 dose)
For the filling:
- 300 g of seasoned shredded chicken (without broth)
- 300 g of Mozzarella
- 1 chopped seedless tomato
- Oregano to taste
- Pitted olives to taste
METHOD OF PREPARATION:
- To make the pastry, first you need to place almost all the wheat flour content in a container (reserve 1 cup) and add the salt, mix lightly.
- Next, add the warm water, oil, salt and cachaça and initially mix with a spatula or spoon. Once the dough is heavier, start mixing with your hands.
- Now, pour the dough onto a clean, floured countertop, gradually sprinkling it with the remaining wheat flour. Then knead and use wheat flour when it starts to stick. This process lasts around 15 minutes until the dough is homogeneous.
- Then, place the dough in a food bag, letting it rest for 30 minutes. Again, flour your counter and now separate the dough into 2 or 3 pieces (it will depend on the size of your counter) take one of these pieces and return the others to the bag to prevent them from drying out.
- Then, roll out the dough well (remembering that the surface must be floured). Cut the pastries into the size you want and fill with filling, passing a little water on the sides and then using a fork, close the pastries.
- Finally, simply fry in hot oil (around 170ºC) and then place in a container lined with paper towel and serve.
