1 – Simple homemade panettone recipe

Ingredients

150g chocolate drops

150g candied fruit and raisins

3 cups of wheat flour

1 tablespoon of panettone essence

1 tablespoon of honey

1 cup of warm milk

½ tablespoon of salt

1 tablespoon of dry organic yeast

½ cup of sugar 

3 eggs

Method of preparation

In a large bowl add the sugar, milk, yeast and beat well with a whisk;

Add the honey, lemon zest, eggs and panettone essence and beat again until it forms a foam;

Gradually add the flour, beating well with each amount added, in the second amount add the salt and continue beating and adding the flour;

As soon as the dough starts to weigh, add the butter and what's left of the flour and beat until the dough is smooth;

Cover the bowl and let the dough rest for 40 minutes or until it doubles in size;

Right after rising, divide the dough into two parts, in one part add chocolate drops, in another part add dried fruits and mix;

In panettone molds, place the dough and let it rest for 40 minutes covered by a cloth;

Right after 40 minutes of rest, brush an egg yolk beaten with milk, place the panettone molds in two larger molds, place on a preheated heat at 190º for 40 minutes or until golden;

Remove from heat, brush with butter, let cool.

2 – Fluffy and moist panettone recipe

Ingredients

1 cup of raisin tea

2 cups of candied fruit tea

Approximately 500g of wheat flour

1 can of condensed milk

1 teaspoon of salt

1 teaspoon of grated nutmeg

2 teaspoons orange zest

1 teaspoon lemon zest

5 beaten eggs

1 cup of butter

1 cup of warm milk

1 cup of sugar

5 yeast tablets

Method of preparation

Mix the yeast with the sugar, add the milk and water and mix well

Add the butter, zest, salt, nutmeg, eggs and condensed milk, beat with a whisk

Add the flour little by little, place the dough on a table, continue adding the flour and knead until it no longer sticks to your hands and the table.

Divide the dough into two, in one part put the raisins and in another part put the candied fruits

Mix the fruits well with the dough and place in panettone molds covered with waterproof paper.

Line them with a kitchen towel and leave in a dry place until doubled in size.

Once they have doubled in size, make two cross-shaped cuts on top of each panettone, add a piece of butter, brush the entire top of the panettone with egg yolk.

Place in preheated oven at 175ºC for approximately 50 minutes

Remove from the oven and unmold.

3 – Homemade chocolate panettone recipe

Ingredients

1 tablespoon of organic yeast

1 cup of warm milk

2 tablespoons of butter 

1 pinch of salt

1 cup of sugar

3 eggs

3 bars of semi-sweet chocolate

1 kg of sifted wheat flour

Method of preparation

Except the chocolate and flour, beat all the ingredients

In a large bowl, add the sifted flour and make a hole in the middle.

Afterwards, add the beaten ingredients into the hole in the flour

Knead well until the dough comes off your hands

In another bowl, break up all the chocolate and add it to the dough.

Divide the dough into two panettone molds.

Let the dough rest until it rises

Cut the dough into a x-shaped shape and brush with egg yolks.

Place in the preheated oven at 180 degrees and bake until it starts to brown.

4 – Recipe for truffled panettone with nest milk and nutella

Ingredients

Filling

600g nutella

200g melted white chocolate

200ml whipped cream

1 box of cream

200g powdered milk

1 can of condensed milk

150g of butter

Roof

100g melted white chocolate

250g melted milk chocolate

You will need 1 chocotone, just use the recipe in this post for a simple homemade panettone and swap the fruits for chocolate chips

Method of preparation:

Filling

Beat condensed milk and butter in a mixer until it becomes creamy.

With the mixer still running, slowly add the powdered milk.

Add the cream and continue beating

With the mixer off, add the whipped cream and mix.

Once the mixture is ready, add the Melted chocolate and beat some more

Place in the fridge for 30/35 minutes

Remove the lid from the chocolate and cut a circle around it.

Little by little, remove the chocolate mass with the help of a spoon.

Make a layer of filling and a spoonful of nutella

With the chocotone crumb, make another layer on top.

Repeat the layers until all the filling is used up and place the top back on the chocolate.

Cover with the melted fractionated milk chocolate, as soon as this chocolate hardens, make another layer with the white fractionated chocolate.

According to legends, the person who invented panettone was a baker from Milan called Toni, in the middle of 1452-1508. Toni was in love with his boss's daughter and invented the sweet bread to impress the girl's father.
