Paella Ingredients:

  • 3 cups of unwashed rice (arborio or long grain rice)
  • 300 g medium shrimp fillets
  • 200 g of whole large shrimp (or crayfish)
  • 250 g squid rings
  • 250 g octopus
  • 200 g mussels (or clams or scallops)
  • 300 g of diced chicken breast or 8 chicken wings (or fish, or rabbit, or duck)
  • 2 large onions
  • 2 tomatoes
  • 1 stalk of leek
  • 1 red pepper for decoration
  • 8 cloves of garlic
  • 1 shrimp (or fish) broth
  • 1 packet of paella seasoning
  • 1/2 teaspoon saffron (essential)
  • 200 g fresh or frozen peas (1 cup)
  • Parsley, olive oil and fresh pepper to taste

METHOD OF PREPARATION:

  1. Start by seasoning the chicken wings (or other recommended proteins) and sauté them in olive oil, turning them over every now and then. If desired, sprinkle with water (small amounts) to prevent them from becoming raw. Set aside.
  2. Then add the squid and octopus and cook in a pressure cooker with half the onion, tomato, bay leaf, parsley/celery and a clove of garlic and do not add water.
  3. Once the pressure is released, wait 5 minutes and turn off the heat, which will naturally release the pressure. Then reserve the liquid formed with these ingredients that you will use for the broth that will cook the rice.
  4. Immediately after, cook the other shellfish for 10 minutes in water.
  5. Paella seasoning: half an onion, 2 cloves of garlic, one tomato, parsley/chives. Once cooked, strain the broth to use on the rice and set aside. Then, if desired, grill the seafood with olive oil, salt and garlic.
  6. Then add more water to the squid/octopus and shellfish broth (reserved), add some shrimp or fish broth and boil.
  7. Now in the paella pan, sauté the pepper strips and the leek slices; then remove these ingredients from the pan and set aside to finish the dish.
  8. Still in this pan, add a lot of crushed garlic, sautéing and adding chopped onion. Then add the rice (without washing) together with the onions and garlic sautéed briefly in the paella pan, add a pinch of saffron to the rice.
  9. Then continue stirring, with the broth mixed with the rice that you added little by little.
  10. As soon as the rice is almost cooked, mix it with the chicken, the squid and the octopus cut after cooking, the rest of the seafood (leave some for decoration on the plate) and a portion of peas.
  11. If necessary, add more water until it is completely cooked.
  12. Finally, add slices of leek, peas, large whole shrimp (or crayfish), shellfish with shells, strips of colored peppers, parsley and chili peppers. Finish with a drizzle of olive oil to taste.

  • Paella: It is basically a specific frying pan used in this dish that is non-stick and shallow and has a wide length.
  • Ingredients: There is a paella kit sold in many fishmongers, which is made from the most common seafood. However, this dish can be prepared according to your taste, being made with a mix of land and sea or just seafood.
  • Seafood: You can choose between shellfish with or without shells. With the shells they are great for decorating the dish.
