  • 1 egg;

Having mixed the dry ingredients, add the butter and start kneading with your fingertips until it forms a type of crumble.

Now in another bowl, crack the eggs to make sure they are not spoiled, then add the egg to your coarse crumbs.

Still kneading with your hands, incorporate the egg yolk into the dough until it is smooth and soft.

Make a ball with this dough and wrap it in plastic wrap. Put it in the fridge for at least 30 minutes to firm it up. On warmer days, you can leave it in for longer so it doesn't get too soft.

The recipe is ideal for a 25-centimeter diameter pie and can be kept in the refrigerator for 3 days without spoiling.

So after you put all the dough in the bottom of your baking tray, you will notice that there is a little left over, this remainder is intended for the topping of your pie.

To bake, place in the oven heated to 180° degrees for 10 minutes. When the 10 minutes have passed and it is still not baked, keep an eye on it until it turns into a crust like we know from pies.

Pie crusts and crusts tend to be very brittle, so be very careful and handle the dough gently after baking.

If possible, let the dough rest a little in the fridge or freezer before putting it in the oven, so that it will be even firmer when baking.

Once baked, it can be filled with ganache, chocolate frosting, or sweets. Or you can opt for baked fillings, in which case they should go straight into the oven with the sweet pie dough still raw.

And if you are going to close the pie by placing the rest of the dough on top, be very careful not to burn the crust and the filling, as it is very delicate and burns quickly.

One tip is to brush an egg yolk on the part that is covering the dough before putting it in the oven, that way when your sweet pie dough comes out it will be shiny and golden, even more beautiful!
