To prepare your meatballs to accompany the pasta in tomato sauce, you will need the following ingredients:
- 500g of ground duck;
- oil;
- ground black pepper;
- 1 teaspoon of salt;
- 6 sprigs of parsley;
- ½ onion;
- 1 egg;
- 2 garlic cloves;
- ¼ cup of breadcrumbs;
- ½ cup of grated Parmesan cheese, the finer the better.
To start, peel the onion and chop it and the garlic into very small pieces. When you've done this, chop your parsley very finely too.
Now separate a bowl and place the ground meat, garlic, onion and season with salt, pepper and whatever else you want.
In another separate pot, crack an egg, to make sure it isn't rotten and you won't lose the whole recipe, and add it to the meat later.
Mix all the ingredients, you can do this with a wooden spoon or with your hands.
Make a ball with all the meat and throw it against the bowl a few times so that it can release collagen and doesn't fall apart when frying.
Once done, also add the breadcrumbs, parmesan cheese and parsley, mix again with your hands to incorporate the new ingredients.
Shape the meatballs, but first grease your hands with olive oil. You can make them any size you prefer, but don't make them too big or too small.
After making the meatballs, set them aside and let's move on to the next step of the recipe.
Prepare the pasta and sauce
Moving on to the next step, we will need the following ingredients:
- 500g spaghetti pasta;
- 1 onion;
- 4 cups of tea tomato paste;
- 2 garlic cloves;
- olive oil to taste.
- salt to taste;
- freshly ground black pepper;
- basil leaves;
- parmesan cheese to taste;
- 2 bay leaves.
In a large pot, place 3 liters of water over high heat, and while it is waiting for it to boil, let's prepare the sauce.
Peel the onion and chop it into very small slices, also peel the garlic and crush it with a little salt to form a paste.
Heat a large frying pan over medium heat and add a tablespoon of olive oil, then add half of the meatballs. Let them brown for a while, about 5 minutes, and roll them around so they brown on all sides.
When they are ready, transfer them to a serving dish, the process may need to be repeated a few times.
After finishing, we will continue using this frying pan, add olive oil, onion, season and leave on the heat for 5 minutes or until it wilts.
When it wilts, add a ladle of boiling water and stir a little, add the garlic and leave to cook for 1 minute.
Add your tomato paste, bay leaves, seasonings and let it cook over medium to low heat until it starts to boil.
When it boils, add the meatballs and let it cook a little more again. And in the meantime, let's prepare the pasta.
Remember that pot with 3 liters of water? When it boils, add a tablespoon of salt and add the pasta, and cook until it reaches al dente.
When you reach this point, you should drain all the water, put the pasta back in the pan and add a cup of tomato sauce. You can add everything together or leave the meatballs separate.
Either way, just serve it with cheese and basil afterwards, it's delicious!
