Ingredients to make Eggplant Lasagna:

  •  3 eggplants
  •  1 unit of onion
  •  3 units of tomato
  •  1 cup tomato sauce
  • 200 grams of olives
  •  1 cup of aromatic herbs (basil, oregano, thyme)
  •  400 grams of sliced mozzarella
  •  100 grams of grated parmesan cheese
  •  2 tablespoons olive oil
  •  salt

METHOD OF PREPARATION:

  1. The first step to making lasagna is to wash the eggplants well, then cut them into slices, removing the ends, lengthwise.
  2. To prevent the eggplants from becoming rubbery and having an undesirable taste, pre-cook them. At this point, it is important to season them with salt and pepper and quickly grill them on each side (an alternative is to cook them for 3 minutes in salted water). Set aside.
  3. In the pan, sauté the chopped onion in olive oil until golden and then add the aromatic herbs, tomato sauce, chopped tomatoes and olives.
  4. Then cook for 10 minutes and stir, checking that it is not sticking to the bottom of the pan. At the end of this time, add salt to taste (you can also use a delicious homemade tomato sauce).
  5. The next step is to assemble the lasagna, following this order: start at the bottom of a baking dish, spread a little sauce and pour 3 to 4 slices of eggplant over it, filling it to form a layer.
  6. Then, place some slices of mozzarella on top of the eggplant and repeat the same assembly order until you run out of ingredients.
  7. Finally, sprinkle with a pinch of Parmesan cheese and bake in a preheated oven at 180ºC for 20 to 30 minutes.
  8. Finally, remove the lasagna from the oven when it is ready and serve it warm, preferably with a simple vegetable salad.
