  • 4 bay leaves;
  • ½ kg of salted pork ribs;
  • water as much as you need;
  • 3 cloves of minced garlic;
  • crushed chili pepper;
  • ½ kg of smoked calabresa sausage;

  • ¼ kg of bacon smoked;
  • 1kg of dried meat;
  • ½ kg of salted pork loin;
  • 2 sausages;
  • 2 salted pig ears;
  • 2 salted pig's feet;
  • ½ cup of oil.

To prepare, start by choosing the beans and leaving them to soak for 12 hours. In the meantime, wash the saltier meats well and leave them to soak for 12 hours as well. If possible, change the water twice.

A tip: leave it like this for one night, that way you don't have to wait a long time without being able to cook.

In a pan with plenty of water and bay leaves, cook the beans, and in the meantime, set aside another pan, add water and cook the salted meats for half an hour.

When it's finished cooking, drain the water and set aside. As soon as the beans start to soften, add the meat, sausage and paio. Let it cook on low heat for about 2 or 3 hours.

In another pan, add oil and sauté the spices separately, and with a ladle, add some of the beans and mash well.

When this ladle of beans with seasonings starts to boil, transfer everything to the pan in which the beans are cooking and let it boil for approximately 30 minutes.
