Ingredients to make the Calabrian sausage pie:
For mass:
- 3 cups (tea) of wheat flour
- 1 teaspoon of salt
- 1 Egg Yolk
- 200g Cold Butter
- About 4 tablespoons of ice water
For the filling:
- 400g Calabrian Sausage
- 1 Onion (finely chopped)
- 2 cloves of garlic (minced)
- 2 Chopped Tomatoes (without seeds)
- 1 pinch cayenne pepper (optional)
- 150g Mozzarella Cheese
- 150g of Coalho Cheese (optional)
- Parsley (to taste)
- ½ cup (tea) of Creamy Cream Cheese
- 1 tablespoon of wheat flour
METHOD OF PREPARATION:
Calabrian sausage pie dough:
- Start with a container containing wheat flour, salt, egg yolk and cold butter cut into cubes.
- Using your fingertips, knead the butter with the flour until it resembles breadcrumbs.
- When it is ready, add the cold water little by little and work the dough until it reaches a moldable texture. Then wrap it in plastic wrap and put it in the refrigerator for at least 30 minutes.
- Then we start to open the dough with 2 plastic bags (or plastic wrap) and, with a rolling pin, open it until it is thin and uniform. Transfer the dough to a pan of no more than 23 cm and of any shape.
- Then, press the bottom and sides of the dough into the pan and fill it. Then cover with the remaining dough.
- Now shape the dough into a lid with interspersed strips, forming a grid. Brush with egg yolk and place in a preheated oven (180°C) for 40 minutes or until golden.
Calabrian sausage pie filling:
- As soon as you put the calabresa sausage in a processor, blend it to leave small pieces.
- Next, add the crushed calabresa sausage to a pan and brown it lightly, then add the onion, chopped garlic, chopped tomatoes without seeds and mix everything together. Cook for about 5 minutes or until the tomatoes are wilted.
- In the next step, add a pinch of cayenne pepper, 1 tablespoon of wheat flour and parsley and mix well. Add ½ cup of cream cheese and cook a little longer until it becomes thick.
- Finally, when the filling has cooled, sprinkle the mozzarella cheese and curd cheese on top and your pie is ready.
Additional Information:
- Ingredients: Do not use regular margarine. If you wish, opt for culinary margarine as it has a higher lipid content and achieves the same result as butter. Another suggestion is lard or vegetable fat!
- Consistency: The egg yolk makes the dough much firmer, so the pie is more structured, but you can make it without it. The cheeses in the recipe are mozzarella and curd, but you can replace them with cheeses of your choice!
- Pepperoni: Avoid using a fatty sausage, this recipe calls for a quality one to achieve the final flavor.
- Conservation: In the fridge you can consume it for a maximum of 5 days or if frozen, it lasts up to 30 days, heat it in the microwave or oven!
