- 1 kilogram of raw cassava
- ½ cup of wheat flour (70 grams)
- 1 can of condensed milk
- 4 medium eggs
- 100 milliliters of oil
- 1 glass of coconut milk (200 ml)
- ½ packet of grated coconut (50 g)
- 1 tablespoon of chemical yeast
METHOD OF PREPARATION:
- Let's start by peeling the cassava and then grating it fine. Blend the grated cassava in a blender with 1 cup of water.
- Now use a cloth or sieve to strain, squeezing well to release as much liquid as possible from the mixture (it is recommended to use a bleached cloth). In a bowl add the grated raw cassava and add the sifted flour.
- Next, separate the yolks and whites and then blend the egg yolks with the condensed milk, coconut milk, oil and grated coconut. Add this mixture to the bowl containing the cassava and incorporate it well (you can now preheat the oven to 180ºC).
- Immediately after that, prepare the egg whites with the egg whites in the mixer and leave them very firm – this is one of the secrets to obtaining a fluffy texture and making the cake rise!
- When ready, gradually add it to the cake batter, before mixing, add 1 pinch of salt so that the egg whites are ready faster.
- Then lightly add the yeast to the dough and incorporate it. Place the dough in a greased cake pan (22 to 24 cm) or a tray (approximately 23 x 33 cm) and place in the oven (180ºC) for 35 to 40 minutes or test with a toothpick, if it comes out clean you can take it out.
- Finally, just remove the cake from the oven, let it cool for a while and then you can unmold it.
