Ingredients you need for the Rainbow Layer Cake:

For mass:

  • ½ teaspoon salt
  • 1.5 cups warm milk
  • 2 heaped cups of sugar
  • 2 teaspoons vanilla
  • 2 tablespoons baking powder
  • 230 g butter
  • 3 cups of wheat flour
  • 5 eggs
  • Red, orange, green, yellow, blue and purple food coloring

For the filling:

  • 9 egg whites
  • 450 g butter at room temperature
  • 2 tablespoons lemon juice
  • 1.5 cups sugar

For the covering and decoration:

  • 1 cup of sugar
  • 1 tablespoon lemon juice
  • 230 g butter at room temperature
  • 5 egg whites
  • sprinkles for decoration (optional)

METHOD OF PREPARATION:

  1. First, preheat the oven to 175º C. Then, grease a 23 cm diameter cake pan and set aside.
  2. Then, sift the flour together with the baking powder and salt and set aside.
  3. Take the sugar and butter and beat until creamy. After that, add the eggs, one by one, beating between each addition.
  4. Now add the vanilla and mix until the dough is smooth. Then, gradually add the flour that was sifted with the salt and yeast, incorporating these ingredients well.
  5. At this point, you distribute the dough into 6 bowls, adding the amount of food coloring you think is ideal to each one and mix.
  6. The next step is to place the dough separately, one at a time, in the pan and cook them for 15 minutes separately (pay close attention at this point so that the dough does not burn as it is thin and cooks quickly).
  7. After removing from the oven, let it cool so you can unmold it. Then turn the mold over, cover it and place it in the refrigerator to cool a little more.

Layered rainbow cake filling and frosting:

  1. Add the egg whites and sugar to a saucepan over medium heat, and stir until the sugar dissolves completely.
  2. Transfer the mixture to another container and beat at high speed until the temperature reduces, then adjust to medium-low speed.
  3. Now add the butter, little by little, incorporating each part until it is completely incorporated into the mixture.
  4. After adding all the butter, beat again for 5 minutes at maximum speed. Then add the lemon juice, mix a little more and set aside.

To assemble the cake:

  1. Start assembling by overlapping the layers of dough and dividing them with the filling. Then, top the cake with the frosting and refrigerate until the frosting is firmer.
  2. Finally, you can remove it from the fridge, and if you prefer, decorate it with colorful sprinkles and serve.
