Ingredients:
Pasta:
- Wheat flour – 100g
- Butter – 100g
- Water – 100ml
- Beaten egg – 4 units
- Salt – 1 pinch
- Sugar – 1 pinch
Filling:
- Ready-made whipped cream in spray

- Icing sugar
METHOD OF PREPARATION:
- First, do the choux pastry and continue cooking over medium heat in a pan filled with water and butter.
- Once it boils, remove from the heat and add the flour, salt and sugar. Then mix well and put it back on the heat, this time on medium-low heat and stir for 2 to 3 minutes, until it has a shiny appearance.
- When turning off the heat, remove and cool, and knead it to speed up the process.
- As soon as the dough has cooled, transfer it to a container and, little by little, while continuing to stir, add the eggs to make the dough smooth, flexible and without becoming soft.
- Transfer the mixture to a pastry bag and draw “sausages” on the baking tray lined with baking paper. Bake in a preheated oven (200°C) for 20 minutes, or until golden brown.
- Right after the previous step, insert the filling into the dough using whipped cream or any cream of your choice (pastry cream is very good).
- To fill, open the éclairs in the center and fill with whipped cream, or make two holes, one at the bottom or the other at the top and insert the whipped cream into one of them.
- Finally, dust the éclair with powdered sugar and it's ready!
