1 – Cassava broth with bacon

See the ingredients for preparation:

  • green smell to taste;
  • 1 chopped onion;
  • 100 grams of chopped bacon;
  • 500g of cassava peeled;
  • 1 chopped calabresa sausage.

In a pressure cooker, place the cassava and cover with water, cover the pan and cook over medium heat for 30 minutes or until pressure is reached. After that, turn off the heat and let the pressure release.

Pour all the cassava and water into the blender and blend until it becomes a completely smooth cream.

Set aside the cassava cream and start preparing the calabresa sausage, place it in a frying pan over medium heat, fry with bacon and onion.

Place the cream next to the Calabrian sausage and mix, turn on the heat and let it boil a little. This is when you will need to season or adjust the seasoning of your broth and it will be ready.

2 – Leek broth

Leeks are the darlings in the preparation of soups and broths, so check out this recipe:

  • 2 stalks of leek;
  • black pepper to taste;
  • 1 dessert spoon of vegetable broth powder;
  • ½ liter of water;
  • green onion to taste;
  • 4 large potatoes.

Start by chopping the leek and sautéing it in a pan with a little olive oil.

Once it starts to wilt, add the chives and let it sauté for a few more minutes. Add the diced potatoes along with the water and vegetable stock.

When the potatoes are softer, let them cool a little and transfer them to the blender, blend the mixture until it becomes a cream.

Put it back in the pan and let it boil, stirring constantly and then add salt and pepper.

3 – Meat broth

And for a broth with more protein, let's look at the ingredients:

  • 1.5 kg of cassava;
  • salt;
  • 1 lemon;
  • 2 large garlic cloves;
  • 1 large onion;
  • 800g of chuck;
  • 2 peppers.

Starting to prepare the broth, cut the meat into small pieces and leave it to soak for 10 minutes in the lemon along with the crushed garlic, salt and 1 crushed pepper.

In a pressure cooker, add a finger of oil, the grated onion or chopped into small pieces and let it brown.

When the onion is golden, add the meat along with the seasoning in which it was soaked, let it fry for at least 15 minutes on both sides.

When you finish frying, add a liter and a half of water, the chopped cassava, salt, ready-made seasoning (if desired), cover the pan and let it cook for 40 minutes.

Let the pressure release, take the cassava and water from the pan and put it in the blender to blend. To avoid damaging the blender, add a little cold water to keep it lukewarm.

Blend until smooth, transfer back to the pan and let boil for at least 3 minutes before serving.
