Chilled puddings: the best recipes without an oven or bain-marie
Frozen puddings are one of the most popular sweets among Brazilians. Any flavor is delicious, whether it's condensed milk, gelatin pudding, chocolate, or other flavors that can't be found in bakeries and restaurants.

Do you know where frozen puddings came from?
It is undeniable that everyone loves and falls in love with a slice of pudding, but when the question is about its origin, not everyone knows how to answer, right?
There is no certain story that confirms the origin of this dessert, in turn the Portuguese claim to be the inventors, back in the 16th century, although there is controversy, as historians report that there is no exact certainty on this issue.
According to one of the versions, the pudding was created by a Portuguese abbot (a religious function above that of a monk).

This story states that this abbot did not share this recipe in any way, making it something secret and woe betide anyone who asked. Due to the fame that the pudding gained over time among the population, he created a competition in which other confectioners competed, seeking among themselves the title of preparing the best pudding of all.
In the end, none of them managed to achieve such a feat with this dessert recipe, leaving only an idea of how to achieve a relatively similar preparation.
It was then that the origin of the recipe was revealed to everyone, and soon after the abbot's death, because the recipe book he used was discovered. With that, we have the legend, but as for its veracity, that is another question.
The first time a pudding recipe was recorded in Brazil was in “O Cozinheiro Imperial”, the first cookbook published in the country, in 1840.
The recipe we know today is made with condensed milk, as you will see here. Before that, the pudding recipe was made with cream.
May 22nd, Pudding Day!
A sweet treat so beloved that May 22nd is National Pudding Day!
However, there is nothing documented about this, nor the reason for this date having a creation.
For example, in the United States, which has a date for many things, the pudding was also remembered – but there it is on February 12th, when National Plum Pudding Day is celebrated.
ICY BAKERY PUDDINGS
INGREDIENTS:
- 700ml whole milk
- 2 cups of sugar
- 1 cup of wheat flour
- 3 eggs
- 1 packet of shredded coconut
- 2 tablespoons butter or margarine
CARAMEL:
- 1 and 1/2 cups of sugar
- 3/4 cup water
PREPARATION METHOD:
- Add the caramel ingredients to a pan, let the sugar melt until it becomes transparent, then grease a square pan and set aside.
- Add all the ingredients to the blender, blend for 5 minutes and pour into the pan, refrigerate for approximately 3 hours.
COLD BREAD PUDDINGS
INGREDIENTS:
- 1 can of condensed milk
- 1 small box of cream
- 300ml of milk
- 3 eggs
- 2 French breads chopped
SYRUP:
- 1/3 cup water
- 2/3 cup sugar
PREPARATION METHOD:
- Add the syrup ingredients to a pan over low heat, let the sugar melt until it becomes transparent, then grease a round, perforated pan and set aside.
- Add all the ingredients to the blender, blend for 5 minutes and pour into the pan, refrigerate for approximately 3 hours.
EGGLESS COLD PUDDINGS
INGREDIENTS:
- 1 can of condensed milk
- 2 boxes of cream milk
- 1/2 cup warm milk
- 1 sachet of unflavored gelatin
- 10 spoons of sugar
METHOD OF PREPARATION:
- Make a caramelized syrup with the 10 tablespoons of sugar and pour it into the pudding mold.
- In a blender, beat the condensed milk and cream, dissolve the gelatin in the milk and place in the blender and beat for 5 minutes and place in the mold on top of the caramelized syrup and refrigerate. Unmold after 2 hours and serve.
REFRIGERATOR PUDDING
INGREDIENTS:
- 1 can of condensed milk
- 1 can of cream
- 1 can of milk (use the measurement from the can of condensed milk)
- 1 unflavored gelatin
SYRUP:
- 2 cups of sugar
- 1 cup of water
METHOD OF PREPARATION:
- Dissolve the unflavored gelatin according to the manufacturer's instructions. Blend all the ingredients in a blender until you obtain a smooth, homogeneous mixture.
- Then place the sugar in a round mold with a central bottom and heat until caramelized. Pour the liquid into the mold and refrigerate until firm. Unmold and serve.
ICE CREAM MILK PUDDINGS
INGREDIENTS:
- 2 cans of condensed milk
- 2 boxes of cream
- 1 cup (tea) of milk
- 1 packet of unflavored powdered gelatin
- 2 tablespoons of sugar to caramelize the pan
METHOD OF PREPARATION:
- Hydrate and dissolve the unflavored powdered gelatin in 1 cup (tea) of milk.
- In a blender, add condensed milk, cream and dissolved gelatin and beat well until a homogeneous mixture is formed.
- Place the sugar in a mold over low heat until it forms a caramel, then pour in the liquid and refrigerate.
- Leave in the fridge overnight. Remove from the pan and place in a glass container and serve immediately.
