Ingredients for Orange pudding with condensed milk:

For the syrup:

  • 1 cup (tea) of sugar (180g)
  • 1/2 cup (tea) of water (120ml)
  • 4 tablespoons orange juice (60 ml)

For the orange pudding with condensed milk:

  • 4 eggs
  • 1 can of condensed milk (395g)
  • 300ml orange juice (300ml)
  • 1 teaspoon orange zest (6g) optional

METHOD OF PREPARATION:

Syrup:

  1. Let's start with the syrup, take a 19cm pudding mold and put the sugar in it and leave it on low heat and stir to melt the sugar.
  2. Then, add the hot water little by little and always stirring. It will start to create bubbles and the melted sugar will become sticky, this is normal.
  3. Then add the orange juice and continue stirring without stopping until the sugar dissolves and forms a very liquid syrup. Then turn off the heat and set aside.

Pudding:

  1. To make the pudding, start by placing the condensed milk, eggs and orange juice in the blender and blend them all for 2 minutes or until they are well mixed. At this time, you can choose to add orange zest with the help of a spoon and incorporate it into the mixture.
  2. Pour this mixture over the caramelized mold and cover it with aluminum foil, leaving the sides well sealed.
  3. The next step is to place it in the preheated oven (180ºC) to bake and place it in a bain-marie for 1 hour or until firm.
  4. When you remove the pudding from the oven after the indicated time, wait for it to cool a little and then put it in the fridge for about 2 hours, after which just unmold it and enjoy serving the pudding.

Additional Information: During the water bath process, it is important that the water is hot. Other tip is to add a small amount of vinegar to a spoon and throw it into the water in the bain-marie so that the shape does not have a dull tone.
