Ingredients for gingerbread on a stick:
For mass:
- Cinnamon powder – 2 teaspoons (4 g)
- Fresh grated ginger – ½ tablespoon (7 g)
- Nutmeg – 1 teaspoon
- Baking soda – ½ tablespoon (7 g)
- Wheat flour – 2 cups (280 g)
- Cocoa Powder – 3 tablespoons (30 g)
- Sugar – ½ cup (100 g)
- Egg – 1 unit
- Milk – ½ cup (125 ml)
- Sunflower or corn oil – ½ cup 125 ml
- Honey – ½ cup (180 g)
For the brigadeiro:
- Condensed milk – 1 can (395 g)
- Sour cream – 1 box (200 g)
- Chopped semisweet chocolate – 200 g
- Butter – 1 tablespoon (15 g)
Coverage and decoration:
- Chocolate Flavored Fractionated Coating – 300 g
- White Chocolate Flavored Fractionated Coating – 100 g
METHOD OF PREPARATION:
Pasta:
- Start by mixing the dry ingredients except the sugar.
- In another bowl, mix the liquids and sugar. Add the mixture manually using a wire whisk for 2 minutes or until you get a more consistent dough.
- Then pour into a medium baking dish that you have greased and floured, and bake for 30 minutes in a preheated oven (160 °C) to brown the dough briefly. Wait for it to cool and unmold it.
Brigadier:
- To make the brigadeiro, place all the ingredients on low heat.
- As soon as you see the chopped chocolate melt, cook for 4 more minutes and then spread it out in a baking dish, covering it with plastic wrap and wait for it to cool.
- Then transfer to a piping bag.
Assembly:
- To assemble, divide the dough in half and fill with the filling.
- Then cut the thin strips to level the sides. Take the larger part of the pan that has been turned towards you and separate it into 4 identical strips horizontally and 5 vertically, making 20 rectangles (7 x 4 cm each).
- Then insert a popsicle stick into the middle of each one.
Bath and decoration:
- To coat, continue melting the semisweet chocolate. Then carefully dip the honey breads in the coating, covering the entire surface.
- Then, leave them resting on a plate covered with parchment paper, refrigerating for 5 minutes to dry.
- Once the white chocolate has melted, place it in a baking paper cone and draw bunny ears, eyes, nose and whiskers in your own style.
- Then, put them in the fridge for 2 minutes to dry.
- Finally, carefully remove them from the greaseproof paper and place them in a plastic bag.
