2 recipes for the Christmas menu
See several possibilities for recipes that can be prepared to make up the Christmas menu. Let's start?
1 – Ricotta Canapés with Olives
To be able to prepare the starter for your Christmas menu, you will need the following ingredients from the basket:
- 250 grams of wheat flour;
- 1 pinch of salt;
- 50ml of ice water;
- 100 grams of butter.
To prepare your basket you will need to start by placing the flour in a bowl and in the middle make a space to add the butter and salt.

Then add water little by little and mix with your hands, until it becomes a soft dough, shape into a round shape and cover with plastic wrap.
Then just put it in the fridge for 1 hour so it can cool down a little and become easier to handle.
Once an hour has passed, remove it from the fridge and roll out the dough with a rolling pin. Use a glass to cut into circles and in a mold with several spaces, for example a cupcake, place the dough inside forming a type of basket.
Place in the preheated oven at 200°C for 15 minutes or until golden and ready. Set aside for now while we prepare the pâté!
And for the delicious ricotta pâté:
- 300 grams of ricotta;
- olive oil to taste;
- salt to taste;
- black pepper to taste;
- 160 grams of olives.
For the pâté the process is simple, in a processor add salt, olives and ricotta, blend until smooth. During this process, add olive oil until it becomes a paste.
Place the ricotta pate in the ready-made baskets and decorate as you wish, you can use chives or parsley.
2 – Walnut farofa
To prepare the farofa, separate these ingredients:
- 2 tablespoons of chopped green chilli;
- 4 tablespoons of unsalted butter;
- 1 small chopped onion;
- ½ cup of tea or 50g of chopped nuts;
- ½ cup of tea or 60g of dark raisins;
- salt to taste;
- 1 ½ teaspoon of garlic;
- 1 ½ small seedless tomato, chopped;
- 1 ½ cups of raw cassava flour.
In a frying pan over high heat add the butter and let it melt, add the onion and sauté until it becomes transparent.
Add the tomato and cassava flour to the frying pan and cook over medium heat, stir occasionally and sauté for 5 minutes. Once the flour is golden, add the salt, garlic, nuts and raisins, sprinkle the green scent on top and you can now serve!
