For the pumpkin:

  • 1 pumpkin
  • 125g cream cheese
  • 220 g of Minas Frescal cream cheese
  • 500 g of medium cleaned shrimp
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

For the shrimp broth in pumpkin with cheese:

  • Shrimp shells and heads
  • 1 tablespoon olive oil
  • 750 ml of water
  • 2 parsley stalks
  • 1 onion
  • 1 tomato
  • 2 black peppercorns

For the filling:

  • 6 medium tomatoes, diced
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1/2 chopped onion
  • 1 clove of minced garlic
  • 2 tablespoons of tomato paste
  • 2 tablespoons chopped parsley
  • Salt and black pepper to taste

HOW TO PREPARE SHRIMP IN PUMPKIN WITH CHEESE:

Squash:

  1. First of all, cut the surface of the pumpkin into a kind of lid. Use a sharp knife to do this. Remove and set aside the lid, removing all the seeds from the inside.
  2. Then, spread the cream cheese on the bottom of the pumpkin and the fresh Minas cheese cream on the sides. Take the shrimp and season it with salt and pepper, then set aside.

Broth:

  1. The next step is to heat a medium saucepan over high heat. Once it is hot, add the olive oil, shrimp shells and heads, mix and leave to cook for about 2 minutes.
  2. Then add the water along with the parsley stalks, onion, tomato and black peppercorns.
  3. Once done, reduce the heat and cook for 20 minutes, and the broth should not boil during this time. After turning off the heat, strain the broth and set aside.

Filling:

  1. Now in a frying pan over high heat, add the olive oil and unsalted butter, brown the shrimp and set aside.
  2. In a medium saucepan, add the olive oil and place over medium heat. Once heated, sauté the chopped onion and garlic, stir and cook for 1 more minute.
  3. Then add the chopped tomatoes, shrimp broth and the remaining ingredients. Cook for 15 minutes.
  4. Then add and mix the fried shrimp, letting them cook for another 2 minutes. Remove from the heat.

Finalization:

  1. Finally, preheat your oven (200ºC). Pour the filling into the pumpkin.
  2. Then, add a spoonful of fresh Minas cheese cream on top of the filling, covering it carefully.
  3. Leave the bottom and sides of the pumpkin lined with aluminum foil.
  4. Once you transfer the pumpkin to a baking dish in a bain-marie, cook for approximately 90 minutes. When removing from the oven, discard the aluminum foil and transfer the pumpkin to a plate.
