3 – BRIGADEIRO WITHOUT TRADITIONAL CONDENSED MILK
(LACTOSE FREE, EGG FREE AND GLUTEN FREE)
INGREDIENTS:
- 1/2 cup soy milk
- 2 tablespoons cocoa powder
- 2 tablespoons of sugar
- 1 tablespoon of vegetable cream
- 400 g of chopped lactose-free semisweet chocolate
METHOD OF PREPARATION:
- Place all the ingredients in a small saucepan and heat over low heat until melted. If you start to notice that the pan is getting too hot, remove the pan from the heat and continue stirring until completely melted.
- Return the pan to the heat and stir for 2 minutes. Attention: Do not wait for it to reach brigadeiro consistency because that will never happen. Once it has melted, it has become slightly creamy, just turn off the heat.
- Remove from heat and now it's up to you: if you're going to use it as a soft brigadeiro and serve it in cups, you can distribute it in the cups.
- Don't eat it hot, it tastes better cold. If you want to roll it, put it in the fridge until it's firm. You don't need to grease your hands with anything to roll it, the brigadeiro dough is very firm and doesn't stick to your hands.

Do you know the origin of condensed milk? And the name “leite moça”?
Industrialized condensed milk was invented in 1856, when American Gail Borden tried to dehydrate cow's milk and realized that, before turning into powder, the product became a delicious cream.
Four years later, the recipe became famous during the American Civil War, when the product began to be transported by troops and became known throughout the country.
In 1857, the first condensed milk production company, Anglo Swiss Condensed Milk, was founded in Switzerland. From then on, the product became popular throughout Europe.
Condensed milk only arrived in Brazil in 1890, when it began to be imported from the United States. It was considered a food for children and mothers who were unable to breastfeed their babies and therefore offered condensed milk in baby bottles.
It became one of the most popular products among Brazilians when presidential candidate Brigadier Eduardo Gomes distributed the brigadeiro sweet among the population during election campaigns to raise funds in 1945.
It began to be incorporated into many other sweet preparations on the tables of thousands of Brazilians. In fact, many collected the recipes that were printed on the cans of the first products. And of course, without chocolate, there is no brigadeiro.
And confectioner Heloisa Nabuco de Oliveira, who at the time was a fervent supporter of the presidential candidate, invented a sweet made from condensed milk, butter and chocolate to raise funds for the electoral campaign.
When Nestlé opened its first factory in the country, in 1921, it did not hesitate and adopted the name that was already on everyone's lips: Leite Moça.
Inspired by its competitor, Nestlé created packaging featuring a young Swiss peasant woman in typical 19th-century attire.
When milk was exported to other countries, equivalent names were created in each language, always associated with the figure of the typical peasant woman with her buckets of milk. In Spanish, for example, it became La Lechera.
