- 2 cups basmati rice
- 1 spoonful of vegetable oil
- 1 medium onion, finely chopped
- 2 garlic cloves, chopped
- 1 red pepper, cut into cubes
- 1 zanahoria, cut into small cubes
- 1 cup of stews (can be fresh or frozen)
- 2 cups of red curry paste
- 1 can of coconut milk
- Salt to taste
- Optional: fresh cilantro leaves for garnish
Method of preparation:
- Rinse the basmati rice under cold water to eliminate excess starch. Check it well and reserve it.
- Heat the vegetable oil in a large frying pan over medium heat.
- Add chopped onion and garlic, and cook them until they are golden and fragrant.
- Add the red pepper and zanahoria, and cook for a few minutes until it browns slightly.
- Add the stews and the red curry paste, and turn it over well so that the ingredients are mixed.
- Add basmati rice to the pan and turn it over to cover it with the curry mixture.
- Pour the coconut milk over the rice and add salt to taste.
