  1. In a large bowl, disuel the yeast in tibia water and let it sit for a few minutes until the mixture starts to foam, which indicates that the yeast is active.
  2. In another bowl, mix the wheat flour and salt.
  3. Leave a tip in the center of the harine mixture and add the activated yeast mixture.
  4. With your hands or a spoon, gradually mix the ingredients, incorporating the harina little by little until a sticky mass is formed.
  5. Transfer the dough to a lightly floured surface and start kneading for about 10 to 15 minutes, until it is smooth and elastic. Add a little more harina if necessary to prevent the masa from sticking to your hands.
  6. Place the dough in a bowl lightly greased with olive oil, covered with a clean cloth and let it rest in a warm place without air currents for approximately 1 hour, until the dough doubles in size.
  7. Preheat the oven to the highest temperature possible, generally around 250°C.
  8. After resting time, remove the dough from the bowl and divide it into individual portions, depending on the desired size of the pizzas.
  9. Using your hands or a roller, stretch each portion of dough into a thin, circular shape.
  10. Transfer each disc of dough to a tray to bake or preheated pizza stone.
  11. Spread a generous layer of tomato sauce over the dough, leaving a border without covering the surrounding area.
  12. Cover the tomato salsa with wheels or dollops of fresh mozzarella queso.
